Loaded Vegan Nachos

So today's post started out as a Mojito recipe...(a really good mojito recipe!)   Buttttt... 4 test recipes and a half of bottle of Bacardi (no judging) later and all I was craving was a big, heaping, plate of nachos. Should have seen that one coming..   Normally a frozen pizza would do the trick, but thanks to a marathon of Mexican recipes on the Food Network and Pinterest exploding with Cinco de Mayo -  it was nachos or bust. And these are SO good guys! SO yummy. And … [Read more...]

Hi!! By the time you see this post I will hopefully be leisurely sunning myself on a California beach, sipping mojitos, without a care in the world :) So while I'm away on vacay I asked Dara, from Generation Y Foodie, to please come and share one of her fabulous recipes with you all! This girl has some of my favorite recipes on the web, always healthy, super inventive, and practical for real world cooking. I could literally cook my way through her blog Monday through Friday.. and then put it … [Read more...]

Creamy Vegan Pasta Primavera

Hi guys! It's 7am. I stink like self tanner. There are more clothes on my bedroom floor than hangers in my closet. And my internet search history looks like I am either an LA restaurant critic or seriously stalk LA restaurant critics.   There's only one thing this can mean... I leave for vacation next Monday!! I am so excited! I'm taking a girls trip with my mom to visit a couple friends in California before I make the big move to my new apartment and job in May. It's been … [Read more...]

Sauteed Ratatouille with Quinoa

Happy Tuesday everyone! Today is an extra special post about a couple extraordinary bloggers and a very important cause. Today we are joining together to help raise awareness for Heart Disease. Kim of Cravings of a Lunatic lost her Mom to heart disease when her mother was 47, and Kim was 15. Each year on the day her Mom passed she shares stories and photos of her Mom. This year she joined forces with Jen of Juanita's Cocina, whose life was also touched by heart disease when her Stepfather had … [Read more...]

Double Berry Banana Smoothie

Hi guys! I'm writing you today from my new pretend home away from home! Long story short I'm apartment/dog sitting for a friend in Chicago and getting a fabulous taste of life outside the burbs. I'm making the big move this summer, but for the next few days I get to play around like a real city girl - strolling down Michigan Ave. (or sprinting - weighted down with 20lbs of thermal gear to fight the cold), drinks with the girls, and toting around my adorable new best friend - … [Read more...]

Chicken Fried Rice

It is snowy and cold in the best ever way possible today.   I'm tucked inside with nothing to do; no way to drive on the roads, huddled in last night's pjs surrounded by cookbooks. I'm wrapping up a website this week so I've been graciously working from home, far from my snow boots and North Face. I really thought I hit my max on snow this year but the whole not having to commute thing is giving me a new zen in the blizzard. Only don't push it blizzard. This is it. The big send … [Read more...]

Caprese Sandwiches with Balsamic Vinaigrette

Today's post is going to be short & sweet! Mainly because my butt is on fire guys. Whoa. I started PT last week for this hip thing I have and I am sore in muscles...I knew I had (lets be serious), but were pretty content not getting any use. Now they're very unhappy about not being able to free load off the rest of my lower half - so high maintenance! But before I go duct tape ice around my entire body I need to share my Caprese Sandwich recipe with you all! I made these sandwiches for a … [Read more...]

Southwest Turkey Bacon Burgers with Avocado Spread

Happy Tuesday everyone! I hope you all had fabulous weekends! How many of you are just starting your work week today?? And be honest... I was watching the news yesterday morning and they said 1.5 million Americans called in sick last year the day after the Super Bowl... which is HILARIOUS. Another 4.4 million came in late. I think this is another instance where our forefathers didn't have the foresight to predict the importance of Budweiser, chili, and chicken wings on our national allegiance … [Read more...]

Chicken Pesto Pasta Salad

So we're coming into the last week of January everyone! Its just about that time when every day-time talk show, magazine, and newspaper reminds us that we are in a competition with our New Years Resolutions and its time to check the score...   So if chocolate, cycling class, and happy hour are kicking your pretty little butt, stop stressing because this isn't the NFL. Not even high school basketball... this is pee wee soccer ladies and gents; and everyone is a winner as long … [Read more...]

Best Chewy Chocolate Chip Cookies – Gluten Free & Dairy Free

So originally I wasn't planning on posting this recipe! The other night I was just baking for fun... because secretly I am an 85 year old grandma trapped in the body of a 25 year old. I also go to bed by 10:30. And drink tea... omyGod! Sounds so much worse when I type it out....   I have been on a mission for the past year to find the absolute best Gluten Free and Dairy Free Cookie recipe! Not even for the blog, but just because I have been dying for a delicious cookie that I can eat … [Read more...]
